Two cinder blocks is usually enough to sink them. But to be safe I put 3 cinder blocks on them if the pallets are heavy duty and cut some pieces out I have thought of building brush piles/fish attractors/whatever you want to call them, but have never had the time (or a boat until recently). I really like the A frames you've put together. I am eager to know how they work out for you.

A better idea is just scoping up the ones everyone else put out and picking them clean.

They are definitely easier to find than put out , but I still enjoy deploying them , especially if I have lots of help.
case in point , there was a nice size cedar tree that had fallen on a point near my place. My neighbor and I had discussed sinking it many times. then it disappeared. We made one pass with side imagining and found it.
We also had found a nice pile that is a great springtime pile in 14 ft. We have fished it for several years , and it had almost completely rotted away, but still held fish. It was on our list of piles that needed to be " beefed up ". Last time out, I was fishing it , and happened to point my livescope away from the pile ,and to my surprise and delight , a new and bigger pile appeared about 20 ft to the east.
good luck
