The best to me is a blue catfish between 2 to 5lb but I will keep bigger but not too big .channel catfish are ok never tried a flathead and bullheads tast like dirt.

OK... I will take a bite!
First, blues - IF cleaned properly, and going to be the whitest, most neutral fish. I have cleaned and cooked a lot of them. Have had multiple people swear they were eating crappie. I have cooked blues and crappie together, and people could not tell them a part. BUT - I remove all of the red meat! Lateral line and any red from the skin side... I like a 5-8 lb fish to clean and get good cuts of meat out of. But smaller fish are great too.
Flatheads are excellent. Usually moving water and they eat live bait most of the time. Have a little bit of a flavor, which most people like.
Channel cat are great also, especially smaller ones. I love smaller pan size, cooked bone in. They do have a little flavor, but most would say it is mild. Make sure to cut the fat - yellowish area off the top of the shoulder on larger fish.
ALWAYS CPR larger fish... no reason to cook anything over 10 lbs. Always plenty of box - eater size fish out there... save the trophy's for others to enjoy and to re-stock. CPR = catch - photograph - release! Do your kids and grandkids a favor!

I only eat blues under 10 lbs. I am a big fan of flat heads. So much so, I can't bring myself to keep one for eating. If I'm catching channels, I move to another spot.
I prefer to keep them when the water temps are under 65. Alabama doesn't have a limit on catfish, except you are only allowed one over 30 inches. I catch enough eater blues between now and May 1st to last me all summer.
He is truly a sick individual.

My 2 cents would be how it is cleaned and prepped before it hits the grease rather than species. You can make anything taste good if you dress it up good . Well almost anything and don’t ask to many questions 🤣
