I bought an inflatable from Boogiemen and plan to use it on a pond close to my house. It's just a basic one, but I am looking forward to getting on the water again.

Anybody know of a place I can practice (pool or something) so I can get used to the balance? Any tips? I'm really nervous and excited both. I don't mind getting wet, I just don't want to stay wet too much.

I do not know of any good places to practice, but up in Lewisville there is a small pond with docks and a boat ramp located on the North East corner of Hebron (Roundgrove) and I-35E. It seems like it might be pretty good for fishing too.

Here is a good link for Kayak Fishing in Texas, although it is heavily slanted towards salt-water it is still a good source of info:
