Stuffed Chicken breast

Chicken breast fillet cut but not all the way through. With the breast being soaked in a brine since 11am from frozen.



Kosher salt, raw sugar, black strap molasses, and soy sauce.


The sliced Brest gets a sliver of onion and jalapeno. American cheese. Folded over. Toothpicks. Then wrapped in bacon using the same toothpicks. The rest of the jalapeno and onion chunks are stuck on top.


Dr pepper beans with added Dr pepper, salt and ground pepper.


Homily corn. Salt, pepper and butter.


Both of which into metal meatloaf pans. Oiled before.


Everything is on the Weber kettle. Indirect heat. Post oak for smoke. Chunk charcoal started by propane torch.


45-an hour. I've already clicked the chrono on my watch.



Making my neighbors hungry because the smell will waft down the street.
