I measure nothing, but I`ll give you my best guess. I use corn meal and flour. 90% corn meal and 10% flour. Then I add Old Bay Seasoning, garlic powder and Fiesta Fajita seasoning. If it isn`t salty enough after that, I will add enough salt that I can taste it. If you want something spicey, just add some cayenne pepper. Your milage may vary.
Sometimes I will coat the fish with a basic hotdog mustard prior to coating. I worked with a few guys that did this and I thought they were nuts until I tried it on some catfish.
Remember...........Hot oil and don`t try frying to many fish at one time. If it's not getting crispy enough, you made just need to fry it longer. Experiment with a few pieces.
