I make them on my Blackstone occasionally. I started doing onions and mushrooms on mine, good stuff.

Do you add them later or while cooking?

Most of the cafe burgers we ate growing up were smash burgers I guess. Good stuff

I make them on my Blackstone. I have only done it twice. I still have a little to learn.

Yes. On the Blackstone.
I've started caramelizing onions and peppers first on the stone. Then pull some of those over to a different hot zone in individual piles. Add 1/2 # balls of hamburger onto the onions and smash. We like them a little thicker and the 1/2 # balls are just right.

PS. If you haven't done smashed taters yet, you should give it a try. Get some mini taters and boil them until they are almost cooked through. Let them cool in the fridge for a while. Put them on the Blackstone with a little oil and cover with a lid. Once they're heated up, smash them to about 1/4" thickness. Let them cook a little longer and flip them. Add S&P and melt some butter throughout. Then add some mexican shredded cheese blend. Let that melt under the cover and enjoy !
