Could I have the motor rebuilt for a faster speed overall or just replace standard prop to a "speed" prop?

I remember years ago when trolling motors were first being used on kayaks and guys from different parts of the country were posting on different websites about what they had tried, this was 15 years ago on different kayaks, not designed for trolling motors... different prop and more powerful motors... the gist of it being they werent getting much more speed . What is the top speed you get now? What speed are you hoping to get? Just like with speed on paddling kayaks and pedaling kayaks, the amount of drag from hull, weight of you, your kayak, and gear will determine what you should expect. I played with model airplane props on my Trolling motor for my kayak and my skiff. The speed doesn't change much, but the hi-tech guys with better meters and such say that the amperage draw drops substantially. Trolling motor props are designed to drag around a 2000+ lb bass boat. A 200 lb kayak doesn't need the same prop. I used a 5 x 12 pitch prop, and cut it to 10", which gave me a "fatter" tip, which is where the most energy is applied, but without the wide blade. I didn't have meters to measure my current draw, but never drained a battery to under 11.5 volts, pulling my 400 lb skiff around. I was impressed with the results from a $5.00 prop. YMMV. IslandJim

45lb thrust is plenty of arse for a kayak. As IslandJim said, the pitch of the prop will likely yield better results than increasing the performance of the motor. If you go with a larger motor or somehow increase the speed of the motor, your battery performance will likely suffer. My vote is to play around with the pitch/size of the prop.
Saying this, it would be interesting to know if OldTown governed the MinnKota for safety reasons??? I don't think they would go through the trouble, but they might have.
