probably been asked a million times but looking for good, spicy, crispy fish fry breading recipe ..and tips before frying to make more crispy
looking for recipe to make my own

I make my own corn meal batter with seasonings lots of times. For the money though and it also taste great, you can`t beat the Louisiana fish fry seasoning. One way to try and have crispy fish is to always use a clean fryer. I always strain my oil after every fish fry and clean my Presto fryer before frying fish again. I get the oil as hot as the Presto will heat it up and then add just enough fish that it doesn`t cool the oil down to much (5-6 small pieces). Adding to much fish at a time will take the oil too long to recover and you`ll get fish that aren`t crispy. I also let the oil heat back up after taking out a batch before adding more fish. Don`t cover the fish with anything to keep them warm. This will result in soggy batter from the steam off of the fish. I turn my oven on WARM (170 degrees) and put the fish in it in between batches. I think smaller pieces cook up better than larger ones as well. Your milage may vary. Good Luck.

I measure nothing, but I`ll give you my best guess. I use corn meal and flour. 90% corn meal and 10% flour. Then I add Old Bay Seasoning, garlic powder and Fiesta Fajita seasoning. If it isn`t salty enough after that, I will add enough salt that I can taste it. If you want something spicey, just add some cayenne pepper. Your milage may vary. confused 3

Sometimes I will coat the fish with a basic hotdog mustard prior to coating. I worked with a few guys that did this and I thought they were nuts until I tried it on some catfish.

Remember...........Hot oil and don`t try frying to many fish at one time. If it's not getting crispy enough, you made just need to fry it longer. Experiment with a few pieces.

I say 325 for cracker breaded fish and 350 for yellow cornmeal dredge.
Cracker
Flour, buttermilk mixed with a whole egg and ground saltine crackers. Cheap brand. Pulse in processor. Not to all dust but you want some dust.
Cornmeal
Just leave it wet and drag it through.
Let all breading sit on fish 30 minutes or so to set up.

I use saltine crackers and an egg wash and season with lemon pepper.
